UC Davis Extension Announces Summer Courses in Viticulture and Wine Business

DAVIS, Calif.—UC Davis Extension offers a variety of courses for novice and experienced grape growers, winemakers and wine lovers. The following courses will take place June-Sept. 2018 in Davis, unless otherwise indicated.

Winery Accounting and Finance for Executives

Augment your understanding of winery-specific accounting and finance issues. Designed for winery principals, executives and accounting staff, this course covers winery financial reporting, winery accounting, inventory costing, business valuation and taxation. Learn to read winery financial statements and discover how statements reveal a winery’s financial condition. David Padres, M.S., MBA, a tax partner at PricewaterhouseCoopers, teaches this course.

Online Introduction to Wine and Winemaking

Whether you’re interested in a career in the wine industry or are just a devoted oenophile, you can take this unique, self-paced course at home, at your convenience. Utilizing an interactive, web-based educational environment, become acquainted with the history of wine, the international wine industry, wine and health issues, and the fundamental processes involved in winemaking. James Lapsley, Ph.D., an adjunct associate professor with the Department of Viticulture and Enology at UC Davis, teaches this course.

  • Enroll now through June 28 and complete by Sept. 17. Passwords issued starting July 2.

Wine Microbiology Workshop

Explore the microscopic world at work when grapes become wine. During this intensive class, members of the wine industry will receive microscope training and practical exercises for identifying wine microorganisms. Lecture topics include yeast and malolactic bacteria strains, starter cultures, fermentations and winery sanitation. In the lab, you’ll examine the use of sterile techniques, plating of cultures, isolation of microorganisms and much more. Michael Ramsey, the teaching laboratory manager for the Department of Viticulture and Enology at UC Davis, and Lucy Joseph, M.S., curator of the UC Davis Wine Microbe Collection, teach this course.

Successful Home Winemaking

Designed for beginning home winemakers, this course provides an overview of all phases of home wine production, including fermentation theory, yeasts and starter cultures, common problems and sanitation. It is an excellent overview for anyone considering making wine for the first time this season. Experienced winemaker, Melissa Pellini, teaches this course.

  • July 21: Sat., 8:30 a.m.-3:30 p.m.

Step-by-Step Winemaking

Gain experience making wine before the fall harvest in this hands-on course designed for novice and small-scale

winemakers. Work with incoming fruit, crush red and white grapes, and press juice using traditional and nontraditional methods. Emphasis is on the actual process, rather than on the theory of winemaking. Charles Brenneman, winemaker for the UC Davis Department of Viticulture and Enology, teaches this course. Note: You must be 21 years of age or older to enroll and attend.

  •  Aug. 11-12: Sat.-Sun., 8 a.m.-4:30 p.m.
